Shyira works with smallholder farmers who cultivate coffee at elevations ranging from 1,850 to 2,300 masl. These high altitudes, paired with cool\u003cbr\u003etemperatures and persistent mountain winds, create ideal conditions for slow cherry maturation and exceptionally long, controlled drying.\u003cbr\u003eAfter pulping, this coffee underwent controlled fermentation and thorough washing before being transferred to raised African\u003cbr\u003ebeds, where it dried slowly over an extended 45-day period.
