The Kayon Mountain Coffee Farm occupies 500 hectares of land in southern Ethiopia. It is owned by multiple families who care for the coffee, cabbage, and indigenous shade trees that grow there. The farm competes with a nearby mining village for seasonal workers, so their pickers tend to be paid higher wages as incentive. Additionally, Kayon Mountain offers free transportation services and financial support for building schools and administration buildings for the community. During processing, their coffees are fermented between 24-36 hours, followed by an average drying time of 12-20 days. Guji Shakiso is an heirloom variety that requires attentive care and is only harvested in limited quantities.
